The gnocchi floats on a delicate shellfish essence then garnished with carrot miso made from the fermented carrot peelings, ethically harvested Yarra Valley salmon roe dusted with smoked hay ash, inhouse buttermilk brined salmon roe, flying fish roe and grated dried Queensland mullet roe.
